Veggie Loaded Paleo Chili

The recipes that I will share on this blog will always be tasty and nutritious, however I am also aiming to make them quick and easy. It is possible to have it all.

I, like most of you don’t have a lot of time to devote to cooking lengthy and complicated recipes. Usually when I am looking for something new to try, if it has more than 7 ingredients, I immediately move on to the next.

I also love to cut time and effort by using prepackaged spices and mixes as I have done in this recipe. You can certainly take the time to mix your own chili seasoning but this organic variety is delicious, void of additives and requires absolutely zero effort on my part. SOLD!

This chili is not your traditional Superbowl Sunday chili. It’s loaded with vegetables and it’s considered Paleo, if you’re into that kind of thing.

Start by cutting your sweet potatoes, zucchini and broccoli in to small chunks.

Next, dice up your sweet onion (don’t forget your sexy onion goggles like mine.) Anyone tried these? They are the BOMB. No more tears.

Now if you can tear yourself away from that lovely picture of me I will continue.

Brown turkey and add frozen spinach.

Once the meat is done, add the cans of diced tomatoes, sweet potatoes and your package of chili seasonings. Let simmer until the sweet potatoes are semi-soft then add the zucchini and broccoli. Simmer until all veggies are at the consistency you want them. Add toppings and serve!

Veggie Loaded Paleo Chili

Delicious healthy take on a fall favorite.


  • 2 Medium Sweet Potatoes
  • 2 Medium Zucchini
  • 1 cup Chopped Broccoli
  • 1/2 cup Diced Sweet Onions
  • 1 cup Chopped Organic Frozen Spinach
  • 1 lb Ground Lean Turkey
  • 1 Packet Organic Chili Seasoning
  • 2 Cans Organic Diced Tomatoes
  • Salt and Pepper to Taste

Optional Toppings

  • Sliced Avocado
  • Shredded Cheese
  • Sour Cream or Greek Yogurt for a lower calorie option
