Craving pancakes, but don’t want the extra carbs? These pancakes are delicious and completely free of grains. The sweetness from the banana makes syrup unnecessary, which is a calorie saving bonus!
These are definitely on my list for a good way to sneak veggies into my children’s diet. I’m still not convinced hiding vegetables in kids food is the best idea, see my post Playing Hide the Zucchini? But for now it works.
These pancakes are easy to make, but not the easiest to work with. They will be quite thin and stick easily. Make sure the pan is greased well for easy flipping.
Get creative with toppings, some ideas are blueberries, coconut shavings, nuts, hemp seed, a dollop of Greek yogurt, sliced kiwi, cottage cheese, pineapple; the possibilities are endless.
Gluten Free Spinach Protein Pancakes
Delicious alternative to traditional pancakes. Grain free, packed with protein and enough sweetness to entice the kids.
- 3 Eggs
- 2 Bananas
- 1/4 cup Chopped Spinach
- 1/4 cup Protein Powder (I used vanilla flavor)
Mash banana well in a mixing bowl.
Add eggs, spinach and protein powder and mix thoroughly.
Grease a large non-stick pan and heat. Pancakes will be about 4 inches in diameter.
Turn temperature down to Low-Medium. Pour small amount of batter. Pancakes will be about 4 inches in diameter.
Put a lid on the pan and let cook until firm enough to flip without breaking.
Flip pancake and cook the other side.
Add your toppings and enjoy!
