10 Minute Cheesy Cauliflower Rice

I know, I’m a broken record when it comes to cauliflower rice, but I can’t help it. I love the versatility, and the fact that I feel like I’m enjoying a rice dish, minus the empty calories. This is by far one of my favorites, I found the recipe on Recipe Nomad, and have been making it once a week ever since.

The original recipe calls for making your own cauliflower rice. I for one, don’t understand making your own when there are so many options out there for pre-made. I find making cauliflower rice time consuming and extremely messy. Although, I have come to prefer the fresh over the frozen as of late. After sampling the fresh varieties, the frozen seem watery to me now. That being said, there are still plenty of options to buy fresh. Costco sells a big bag, it’s not only fresh but organic as well. Green Giant also has a variety which can be found at most major grocery stores, as well as Target. Trader Joe’s has a fresh variety, however it isn’t organic like their frozen brand.

Any of these will work nicely in this recipe, or if you are feeling ambitious, you can make your own. I didn’t do it this time, but I think a wonderful addition to this would be green peas. I’ve been serving topped with a lightly seasoned white fish,  but any protein would compliment nicely.

This recipe is called 10 minute because it literally takes just that, even less if you use pre-made.

10 Minutes Cheesy Cauliflower Rice

Rich, creamy and full of flavor, you won't miss traditional rice! 

Ingredients

  • 16 Ounces Uncooked Cauliflower Rice
  • 1/2 Cup Green Onions
  • 1/2 Cup Shredded cheddar cheese (original recipe calls for 1/4 cup, but I like it extra cheesy)
  • 1 Tbls Olive oil (original recipe calls for 2 Tbls, but I find you don't need that much)
  • 1 Tbls Butter

Instructions

  1. Heat olive oil in large pan.

  2. Add cauliflower rice and saute until soft, about 6 minutes. 

  3. Add butter and cheese and mix well. 

  4. Remove from heat, add green onions and lightly toss.

  5. That's it! So easy and you have a delicious and nutritious vegetable side.
