Chicken Artichoke Pesto

This is not a recipe, the reason it’s not a recipe is the work is done for you. All you have to do it buy 4 ingredients, yep that’s not a typo, 4 ingredients, 30 minutes, and you have a delicious meal the whole family will love.

I like to use the thin sliced chicken breast they have at Trader Joe’s, if that’s not available to you, I would suggest using chicken tenders. You want the chicken to be thin enough that it cooks quickly and stays tender.

Here is your grocery list for this “recipe”.

Pre-made Pesto, I like this one from Trader Joe’s, but you can use any kind.

2 cans of artichoke hearts

Approximately 1 pound of chicken breast sliced thin.

Crimini Mushrooms

Chicken Artichoke Pesto

4 Ingredients and 30 minutes is all you need for this delicious and easy dinner. 


  • 1 Tub Pesto
  • 2 Cans Artichoke hearts in water
  • 1 Pound Chicken breast sliced thin
  • 1 Bag Crimini Mushrooms


  1. Preheat oven to 350 degrees

  2. Slice chicken into strips. 

  3. Drain water from artichokes. 

  4. Add chicken, pesto, mushrooms and artichokes to a bowl and mix well, making sure everything is evenly coated with pesto sauce. 

  5. Line a baking dish with non stick foil or lightly grease. 

  6. Add mixture and spread evenly across baking dish. 

  7. Cook for approx 20-25 minutes. Remove from oven and check to make sure the chicken is cooked all the way through. 

  8. Serve over cauliflower rice or noodles. 

  9. Top with Parmesan and voila you have the easiest meal ever!
