    Cauliflower Rice – The Holy Grail of the Vegetable World

    Cauliflower rice has changed my world, no joke. Yes the cauliflower of yesteryear was moderately tasty when dipped in ranch dressing or drenched in butter and cheese. However the new and improved take on a rather bland and boring veggie has endless possibilities.

    First the lowdown on the calories and carbohydrate content of cauliflower rice vs. brown rice.
    *25 calories per cup vs 218 per cup
    *5 grams of carbohydrates per gram vs. 46 grams

    You can use it to replace traditional rice and even pasta in most dishes. I love it with a little butter, salt and pepper as a side or to soak up whatever yummy sauces I am using with my main dish. Not only is our cruciferous friend versatile, tasty, low cal and low carb but it is packed full of health promoting nutrients such as Vitamin C, Vitamin K, Vitamin B6 and Folate. It is also a good source of dietary fiber, choline, omega 3 fatty-acids, manganese, phosphorus and Biotin.

    When cauliflower rice began gaining popularity a few years ago it was an arduous task to get the cauliflower into a rice-like consistency. It took a quality food processor and a lot of clean up as cutting and ricing a head of cauliflower can be quite messy and honestly a pain. Now you can buy riced cauliflower almost anywhere and even better, organic riced cauliflower! Hooray!

    Costco recently started to carry a giant bag, and yes I know it’s unnecessary to say giant bag as everything is giant from Costco, but I will say it anyway. It’s organic and packed up nicely in serving bags that will easily feed 2 people. I not only love the convenience of not having to rice it myself but it keeps in the freezer endlessly. Trader Joes also has a nice Organic offering in their frozen foods section and often have non-organic in their fresh vegetable section.
