Yesterday morning I was looking through my spice cabinet trying to get inspired to make something new for Sunday breakfast. What I came across was my bottle of Trader Joe’s Everything But the Bagel Seasoning. This stuff is a must try if you haven’t yet. You can use it with a myriad of different things. Sprinkle on salads, toss in scrambled eggs, top chicken or other proteins, season popcorn, the list goes on and on.
Wanting to try something new, and lacking a variety of ingredients, I took to Pinterest for some inspiration. The one thing I always have on hand is cauliflower rice, so that seemed like a safe bet. What I found was an awesome recipe from Keto Connect for Cauliflower Hash Browns. Instead of the seasonings the recipe calls for, I substituted the Everything Bagel seasoning. I even made them heart shaped, why you ask? Why not is the question!
I ate the leftovers today and topped with plain Greek yogurt, salsa and green onions. It was fabulous. Avocado would also be a great topper, but sadly ours aren’t ripe enough yet.
Cauliflower Hash Browns
Simple 4 ingredient recipe, easy to make, tasty and full of nutrition. These are sure to become a brunch favorite.
- 3 Cups Cauliflower Rice
- 3/4 Cup Shredded Cheddar Cheese
- 1 Large Egg
- 2 Tbls Trader Joe's Everything But the Bagel Seasoning (can sub salt, garlic powder and pepper if you don't have)
Preheat oven to 400 degrees.
Microwave cauliflower for 3 minutes or until soft, use paper towel to remove excess moisture.
Mix in egg, cheese and seasoning.
Grease a non-stick pan or use non-stick foil.
If you have a cookie cutter big enough use that to form patties. If not use your hands.
Form mixture into six equal sized patties.
Cook for 20 minutes and remove from oven. With a spatula carefully flip over each patty. Return to oven for an additional 5 -10 minutes or until golden brown.
